- 1 lb large raw shrimp (peeled, deveined & tail-off)
- 2 large eggs
- 1.5 cups panko breadcrumbs
- ½ cup tapioca flour (or cornstarch)
- ½ cup mayonnaise
- ¼ cup Thai sweet chili sauce
- 8 oz coleslaw mix
- 10 flour tortillas
- ½ tsp paprika
- ½ tsp garlic powder
- ¼ tsp onion powder
- Kosher salt & black pepper
- Cooking spray
- ¼ cup chopped cilantro
- ¼ cup chopped green onion
- juice from ½ lime
- squirt of sriracha
Instructions
- Pat the shrimp dry and set up a dredging station: one bowl with tapioca flour mixed with paprika, garlic powder, onion powder, salt, and pepper; another bowl with panko breadcrumbs; and a third bowl with whisked eggs.
- Dredge each shrimp in the tapioca mixture, then dip in the egg wash, and finally coat with panko breadcrumbs. Spray lightly with cooking oil.
- Preheat the air fryer to 390°F and cook the shrimp for about 7 minutes, flipping halfway through.
- While shrimp cooks, whisk together mayonnaise, Thai sweet chili sauce, and sriracha for the bang bang sauce. Toss coleslaw mix with chopped cilantro, green onion, lime juice, sriracha, and salt.
- Assemble tacos by layering tortillas with slaw and crispy shrimp; drizzle with additional bang bang sauce if desired.
