Description

  • 1 lb large raw shrimp (peeled, deveined & tail-off)
  • 2 large eggs
  • 1.5 cups panko breadcrumbs
  • ½ cup tapioca flour (or cornstarch)
  • ½ cup mayonnaise
  • ¼ cup Thai sweet chili sauce
  • 8 oz coleslaw mix
  • 10 flour tortillas
  • ½ tsp paprika
  • ½ tsp garlic powder
  • ¼ tsp onion powder
  • Kosher salt & black pepper
  • Cooking spray
  • ¼ cup chopped cilantro
  • ¼ cup chopped green onion
  • juice from ½ lime
  • squirt of sriracha

Instructions

  1. Pat the shrimp dry and set up a dredging station: one bowl with tapioca flour mixed with paprika, garlic powder, onion powder, salt, and pepper; another bowl with panko breadcrumbs; and a third bowl with whisked eggs.
  2. Dredge each shrimp in the tapioca mixture, then dip in the egg wash, and finally coat with panko breadcrumbs. Spray lightly with cooking oil.
  3. Preheat the air fryer to 390°F and cook the shrimp for about 7 minutes, flipping halfway through.
  4. While shrimp cooks, whisk together mayonnaise, Thai sweet chili sauce, and sriracha for the bang bang sauce. Toss coleslaw mix with chopped cilantro, green onion, lime juice, sriracha, and salt.
  5. Assemble tacos by layering tortillas with slaw and crispy shrimp; drizzle with additional bang bang sauce if desired.
