  • 3 tbsp granulated white sugar
  • 1 ¾ cups all-purpose flour
  • 2 ½ tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground allspice
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup light brown sugar, packed
  • 2 egg yolks, at room temperature
  • 2 tsp vanilla
  • 6 oz cream cheese, cold
  • 1/4 cup granulated white sugar
  • 2 tbsp apple cider reduction
  • 1/4 cup granulated white sugar (for topping)
  • 1/4 tsp ground cinnamon (for topping)
  • 1/8 tsp ground nutmeg (for topping)
  • pinch ground allspice (for topping)
  • 12 tbsp salted butter, melted (for topping)

Instructions

  1. Simmer apple cider in a saucepan until reduced to about 1 cup; cool.
  2. In a mixing bowl, beat cold cream cheese with granulated sugar and vanilla until smooth. Refrigerate.
  3. Cream softened butter and sugars together, then mix in egg yolks and cooled apple cider reduction.
  4. Gradually add flour and spices until just combined.
  5. Preheat oven to 350°F (175°C) and prepare baking sheets lined with parchment paper.
  6. Form dough around a teaspoon of cheesecake filling to create balls and place them on the sheets.
  7. Bake for about 11 minutes until edges are golden but centers are soft.
  8. Brush with melted butter and sprinkle spiced sugar topping immediately after baking.
