- 1 ¾ cups all-purpose flour
- 2 ½ tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground allspice
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 3/4 cup unsalted butter, softened
- 3/4 cup light brown sugar, packed
- 2 egg yolks, at room temperature
- 2 tsp vanilla
- 6 oz cream cheese, cold
- 1/4 cup granulated white sugar
- 2 tbsp apple cider reduction
- 1/4 cup granulated white sugar (for topping)
- 1/4 tsp ground cinnamon (for topping)
- 1/8 tsp ground nutmeg (for topping)
- pinch ground allspice (for topping)
- 1–2 tbsp salted butter, melted (for topping)
Instructions
- Simmer apple cider in a saucepan until reduced to about 1 cup; cool.
- In a mixing bowl, beat cold cream cheese with granulated sugar and vanilla until smooth. Refrigerate.
- Cream softened butter and sugars together, then mix in egg yolks and cooled apple cider reduction.
- Gradually add flour and spices until just combined.
- Preheat oven to 350°F (175°C) and prepare baking sheets lined with parchment paper.
- Form dough around a teaspoon of cheesecake filling to create balls and place them on the sheets.
- Bake for about 11 minutes until edges are golden but centers are soft.
- Brush with melted butter and sprinkle spiced sugar topping immediately after baking.
