  • 1 ¼ cups apple cider (reduced to ½ cup)
  • 1 ½ cups flour
  • 6 tablespoons unsalted butter (room temperature)
  • 1 egg
  • 1 cup chopped apples (preferably Granny Smith)
  • Streusel topping: flour, brown sugar, granulated sugar, cinnamon

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×9 inch baking dish.
  2. In a saucepan, reduce apple cider from 1 ¼ cups to ½ cup over medium heat. Allow to cool.
  3. Prepare streusel by mixing melted butter, flour, sugars, and cinnamon until crumbly.
  4. In a bowl, whisk together flour, salt, baking powder, baking soda, cinnamon, nutmeg, and ginger.
  5. In another bowl, cream butter and sugars until light; add egg and vanilla.
  6. Mix in yogurt followed by reduced cider; gradually add dry ingredients and fold in apples gently.
  7. Layer half the batter in the baking dish, sprinkle with half the streusel; repeat layers.
  8. Bake for about 40 minutes or until a toothpick comes out clean.
  9. While baking, prepare glaze by whisking powdered sugar with reduced cider and vanilla.
