  • 1/2 cup unsalted butter, at room temperature
  • 2/3 cup packed light brown sugar
  • 1 large egg, at room temperature
  • 2 teaspoons vanilla extract
  • 1 2/3 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1 cup powdered sugar
  • 1 tablespoon pure maple syrup
  • 2 tablespoons milk
  • heavy pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, combine diced apple with brown sugar and cinnamon; set aside.
  3. In a stand mixer, beat butter and brown sugar until fluffy. Add egg and vanilla; mix well.
  4. Gradually add flour, baking powder, spices, and salt until just combined. Fold in apple mixture.
  5. Scoop dough onto prepared sheets about 2 inches apart.
  6. Bake for 12 to 15 minutes until edges are firm but centers are soft.
  7. Mix glaze ingredients in a bowl until smooth; drizzle over warm cookies.
