- 1 tablespoon olive oil
- 2 tablespoons butter
- 2 cloves garlic, minced
- 1 cup apple cider
- 1/2 cup chicken broth
- 1 tablespoon Dijon mustard
- 1 teaspoon dried thyme
- 1/2 teaspoon cinnamon
- 4 small sweet potatoes, peeled and cubed
- 1 large apple, cored and sliced
- 1/2 cup pecans, chopped
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Season the chicken breasts with salt and pepper on both sides.
- In a large ovenproof skillet, heat olive oil over medium-high heat and sear the chicken for about 5–7 minutes on each side until golden brown. Remove from skillet and set aside.
- In the same skillet, reduce heat to medium, melt butter, and sauté minced garlic until fragrant (about 1 minute).
- Add apple cider and chicken broth; scrape up brown bits from the skillet and stir in Dijon mustard, dried thyme, and cinnamon. Simmer for about 2 minutes.
- Add sweet potatoes and apple slices to the skillet; stir to coat them in the sauce.
- Nestle chicken back into the skillet among sweet potatoes and apples.
- Sprinkle chopped pecans over everything.
- Transfer skillet to preheated oven and bake for about 25–30 minutes until chicken is cooked through and sweet potatoes are tender.
- Let rest for a few minutes before serving; garnish with fresh parsley.
