  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 cup apple cider
  • 1/2 cup chicken broth
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried thyme
  • 1/2 teaspoon cinnamon
  • 4 small sweet potatoes, peeled and cubed
  • 1 large apple, cored and sliced
  • 1/2 cup pecans, chopped
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken breasts with salt and pepper on both sides.
  3. In a large ovenproof skillet, heat olive oil over medium-high heat and sear the chicken for about 5–7 minutes on each side until golden brown. Remove from skillet and set aside.
  4. In the same skillet, reduce heat to medium, melt butter, and sauté minced garlic until fragrant (about 1 minute).
  5. Add apple cider and chicken broth; scrape up brown bits from the skillet and stir in Dijon mustard, dried thyme, and cinnamon. Simmer for about 2 minutes.
  6. Add sweet potatoes and apple slices to the skillet; stir to coat them in the sauce.
  7. Nestle chicken back into the skillet among sweet potatoes and apples.
  8. Sprinkle chopped pecans over everything.
  9. Transfer skillet to preheated oven and bake for about 25–30 minutes until chicken is cooked through and sweet potatoes are tender.
  10. Let rest for a few minutes before serving; garnish with fresh parsley.
