  • 6 everything bagels
  • 7 large eggs
  • 2 ½ cups half-and-half
  • 1 pound chicken or turkey sausage
  • 1 red bell pepper, diced
  • 1 small yellow onion, diced
  • 3 cups sharp cheddar cheese, shredded
  • 1/2 tablespoon vegetable oil
  • 1 teaspoon kosher salt
  • 1/8 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley, divided

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 13 x 9-inch casserole dish.
  2. Cut each bagel into bite-sized pieces and set aside.
  3. In a large bowl, whisk together eggs, half-and-half, salt, and pepper; fold in bagel pieces and let sit.
  4. In a skillet, heat oil over medium-high heat; brown the sausage until cooked through.
  5. Add diced vegetables to the skillet; sauté until softened. Drain excess fat and cool slightly.
  6. Combine sausage mixture with bagel-egg mix; stir in parsley and cheese.
  7. Pour the mixture into the prepared dish; cover with foil and bake for 20 minutes.
  8. Remove foil and bake for an additional 25 minutes until set.
