- 5–6 medium sweet potatoes (peeled & cut into thin medallions)
- ¼ cup unsalted butter
- ¼ cup brown sugar
- ½ cup water
- 1 teaspoon ground cinnamon
- 1 teaspoon ground cloves
- 1 teaspoon ground nutmeg
- ¼ teaspoon salt
- ¼ cup chopped pecans (or walnuts)
- ½ cup mini vegan marshmallows
Instructions
- Preheat your oven to 400°F (200°C).
- Peel sweet potatoes and slice them into thin medallions. Arrange them in a baking dish.
- In a medium saucepan over medium heat, melt the butter with brown sugar, water, cinnamon, cloves, nutmeg, and salt until smooth.
- Brush three-fourths of the sauce over the sweet potato medallions. Cover with foil and bake for about 45–50 minutes until tender.
- Remove foil, pour remaining sauce over, then sprinkle with pecans and vegan marshmallows.
- Broil for about 1–2 minutes until the marshmallows are golden brown.
- Allow to cool for 10–15 minutes before serving.
