  • 1 cup unsalted butter (room temperature)
  • 1 cup brown sugar (packed)
  • 1/2 cup white granulated sugar
  • 3/4 cup Biscoff cookie spread
  • 2 tsp pure vanilla extract
  • 2 large eggs (room temperature)
  • 1 cup mini chocolate chips

  2. In a mixing bowl, sift together flour, baking soda, and salt; set aside.
  3. In a stand mixer or using a hand mixer, beat butter with brown and white sugar until light and fluffy. Add Biscoff cookie spread and mix until combined.
  4. Incorporate eggs and vanilla extract into the mixture, then gradually add the dry ingredients until just combined. Gently fold in mini chocolate chips.
