Ingredients

  • 2 cups blackberries
  • 3 tbsp balsamic vinegar
  • 6 tbsp sugar
  • 2 tbsp lemon juice
  • 300 g double cream brie cheese
  • 8 slices sourdough bread
  • Butter (as needed)
  • Chopped fresh thyme

Instructions

  1. Make the blackberry balsamic jam by combining blackberries, balsamic vinegar, sugar, lemon juice, and salt in a saucepan over medium-high heat. Bring to a boil and then simmer for 7-10 minutes until thickened.
  2. Slice the brie cheese into ½ inch pieces. Heat a skillet over medium heat.
  3. Butter one side of four slices of sourdough and place them butter side down in the skillet. Top with brie and sprinkle with thyme.
  4. Spread blackberry jam on the remaining bread slices and place them jam side down atop the brie-covered slices. Butter the top of these sandwiches.
  5. Cook until both sides are golden brown and the cheese has melted.
  6. Let cool slightly before slicing and serving.
