Ingredients

  • 810 slices chicken bacon, chopped
  • 8 breakfast turkey sausage links
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 1.5 lbs Russet potatoes, peeled and diced
  • 6 large eggs
  • 1 cup shredded cheddar cheese
  • Salt and pepper, to taste

Instructions

  1. In a cast iron skillet over medium heat, cook turkey sausage until browned. Remove and set aside.
  2. In the same skillet, cook chicken bacon until crispy. Remove and leave some grease in the pan.
  3. Add diced potatoes to the skillet, season with salt and pepper, and cook until crispy on all sides (about 8-10 minutes).
  4. Sauté onion, bell pepper, and garlic in the empty side of the skillet for about 3 minutes.
  5. Chop cooked sausage into bite-sized pieces and return both sausage and chicken bacon to the pan; add smoked paprika.
  6. Create wells in the mixture and crack an egg into each well; sprinkle cheese on top.
  7. Cover the skillet and cook on low heat until egg whites are set.
