  • 1 cup whole milk, warmed
  • 2 1/4 teaspoons active dry yeast
  • 1/4 cup (2 ounces) brown butter, cooled to soft room temperature
  • 1 large egg, room temp
  • 1 teaspoon vanilla bean paste
  • 1 cup brown sugar (for filling)
  • 1 tablespoon ground cinnamon
  • 1/2 cup (4 ounces) brown butter, cooled to soft room temperature (for filling)
  • 1 teaspoon vanilla bean paste (for frosting)
  • 1 8-ounce brick of cream cheese, softened to room temp (for frosting)
  • 1/4 cup brown sugar (for frosting)
  • 1/4 cup (2 ounces) brown butter, cooled to soft room temperature (for frosting)

Instructions

  1. Prepare brown butter by melting butter over medium heat until it turns light brown and smells nutty. Set aside to cool.
  2. In a stand mixer, combine warmed milk, brown sugar, yeast, egg, and vanilla. Let sit for about 5 minutes.
  3. Add flour, cooled brown butter, and salt to the yeast mixture; mix until combined and smooth.
  4. Allow dough to rise in a warm place until doubled in size (about 1 hour).
  5. Prepare filling by mixing brown sugar and cinnamon.
  6. Roll out dough into a rectangle and spread filling evenly. Roll tightly and cut into pieces.
  7. Place rolls in a greased baking dish, cover, and let rise again for about an hour.
  8. Preheat oven to 350°F (175°C) and bake for 25-30 minutes until golden.
  9. Mix frosting ingredients until fluffy; frost rolls after cooling slightly.
