  • 3/4 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 2 teaspoons espresso powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon fine sea salt
  • 1/2 cup unsalted butter
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar (packed)
  • 2 large eggs
  • 1 egg yolk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (180°C) and line baking sheets with parchment paper.
  2. Melt the semi-sweet chocolate in a microwave-safe bowl until fully melted; set aside.
  3. In another bowl, whisk together flour, cocoa powder, espresso powder, baking powder, and salt.
  4. Combine melted butter and sugars in a heatproof bowl; microwave until melted and stir well.
  5. Whisk in eggs and vanilla until smooth.
  6. Fold in the melted chocolate followed by the dry ingredients until just combined.
  7. Scoop dough onto prepared baking sheets, spacing them apart.
  8. Bake for 9–10 minutes for large cookies or 8–9 minutes for standard cookies until soft in the center.
