  • ⅓ cup (81g) pumpkin puree
  • ¾ cup (150g) packed brown sugar
  • ¼ cup (50g) granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground nutmeg
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • ¼ teaspoon ground allspice
  • 1 ¾ cups (217g) all-purpose flour
  • About 20 caramel candies
  • ¼ cup (50g) granulated sugar for rolling
  • 1 tablespoon ground cinnamon for rolling

Instructions

  1. In a mixing bowl, beat together softened butter, pumpkin puree, brown sugar, and granulated sugar until well combined.
  2. Add egg yolk and vanilla extract; mix until smooth.
  3. Stir in baking soda, salt, spices, and then gradually add flour until a dough forms.
  4. Chill scooped dough balls for 30 minutes on a parchment-lined cookie sheet.
  5. Place caramel candy between two dough balls and roll into a ball; chill again for at least an hour.
  6. Roll in cinnamon-sugar mixture before baking at 350°F for 12-15 minutes until lightly golden.
