  • 6 tbsp (75 g) granulated white sugar
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1/8 tsp ground allspice
  • 1/8 tsp ground nutmeg
  • 1/4 tsp ground cardamom

  • 1 1/4 cups (280 g) unsalted butter
  • 2 cups (250 g) all purpose flour, spooned and leveled
  • 1 tbsp ground cinnamon
  • 1 1/2 tsp ground ginger
  • 1/2 tsp ground allspice
  • 1/2 tsp ground nutmeg
  • 1 tsp ground cardamom
  • 1/4 tsp ground cloves
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/4 cups (275 g) light brown sugar
  • 4 egg yolks, at room temperature
  • 2 tsp vanilla extract
  • 1/2 tbsp heavy cream
  • 1/2 tbsp molasses

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a small bowl, mix granulated sugar with ground cinnamon, ginger, allspice, nutmeg, cardamom, and cloves.
  3. Brown the unsalted butter in a saucepan until golden brown; let cool slightly.
  4. In a large mixing bowl, combine the cooled brown butter and light brown sugar until smooth. Mix in egg yolks one at a time followed by vanilla extract, heavy cream, and molasses.
  5. In another bowl, whisk together all-purpose flour, baking powder, baking soda, salt, and spices. Gradually add this mixture to the wet ingredients until combined.
  6. Scoop dough into balls, roll in spiced sugar mixture, and place on prepared baking sheets.
  7. Bake for about 11 minutes until edges are lightly golden; let cool before serving.
