- 2.5 lbs Yukon gold potatoes
- 5 tablespoons unsalted butter
- 3 large egg yolks
- 1 tablespoon dried thyme
- 1 tablespoon fresh chives (minced)
- 1 tablespoon fresh parsley (minced)
- ¼ teaspoon ground nutmeg
- 1 teaspoon salt
- ½ teaspoon ground pepper
- 2 oz gruyere cheese
- 2 oz parmesan cheese
Instructions
- Peel and quarter the Yukon gold potatoes. Boil in salted water until fork-tender (15-20 minutes). Drain.
- Preheat your oven to 425°F and line a baking sheet with parchment paper.
- Mash the drained potatoes until smooth. Stir in melted butter, egg yolks one at a time, and mix in thyme and cheeses until blended.
- Pipe mounds onto the prepared baking sheet, brush with remaining melted butter.
- Bake for 18-20 minutes until golden brown on top.
