- 5 lbs Russet potatoes (sliced ⅛” thick)
- 2 cups onions (chopped small)
- 6 cloves garlic (minced)
- ¼ cup butter
- ¼ cup flour
- 1 ½ cups vegetable broth
- 1 ½ cups heavy cream
- 8 oz sour cream
- 3 cups cheddar cheese (grated, divided)
- 1 cup pepper jack cheese (grated)
- 1 cup freshly grated Parmesan cheese
Instructions
- Preheat your oven to 400°F (200°C) and prepare a baking dish by spraying it lightly with non-stick spray.
- Thinly slice russet potatoes into approximately ⅛” thick pieces and place them in a mixing bowl.
- In a large frying pan over low heat, melt butter. Add chopped onions and minced garlic; sauté until softened.
- Sprinkle flour over the onion mixture; stir well and cook for an additional couple of minutes.
- Gradually add vegetable broth while stirring continuously until combined. Then add salt, pepper, heavy cream, and stir until the sauce thickens.
- Remove from heat and mix in 2 cups of grated cheddar cheese until melted.
- Layer one-third of the potato slices in the prepared baking dish followed by one-third of the sour cream and one-third of the cheese sauce. Repeat this process two more times, finishing with a layer of cheddar on top.
- Cover with foil and bake for 1½ – 2 hours until potatoes are tender when pierced with a fork.
- About 15-20 minutes before serving, remove the foil to allow the top layer of cheese to brown slightly.
