  • 6 g Sea salt (1 tsp)
  • 7 g Instant yeast (2¼ tsp)
  • 1 large Egg + 1 yolk (room temperature)
  • 160 g Whole or 2% milk (â…” cup, warmed ~90°F)
  • 42 g Unsalted butter (3 tbsp, softened)
  • 42 g Salted butter (3 tbsp melted)
  • 125 g Milk chocolate (or semi-sweet chocolate bar) (4 oz)
  • 5 g Cocoa powder (1 tbsp)
  • ¾ tsp Cinnamon
  • â…› tsp Sea salt (a pinch)
  • 56 g Cream cheese (2 oz/4 tbsp, room temperature)
  • 40 g Powdered sugar (â…“ cup)
  • 5 g Dutch process cocoa powder (1 tbsp)
  • 2 tsp Whole or 2% milk (room temperature)
  • Pinch Sea salt

Instructions

  1. In a stand mixer bowl, combine bread flour, cocoa powder, sugar, salt, yeast, egg, and warm milk. Mix until dough forms.
  2. Add softened butter gradually while mixing until smooth and elastic.
  3. Shape dough into a ball and let it rise in a greased bowl for 90-120 minutes until doubled.
  4. Roll out the dough into a rectangle; prepare the filling by melting chocolate with butter and adding cocoa powder and cinnamon.
  5. Spread the filling over the rolled dough, roll it up tightly, pinch seams, and cut into equal pieces.
  6. Place rolls in a baking pan to rise again for 30-45 minutes before baking at 350°F for about 22 minutes.
  7. Make frosting by blending cream cheese with powdered sugar, cocoa powder, salt, and milk; spread over warm rolls.
