  • 1 tablespoon olive oil
  • 400 g (1 lb) chicken sausage, casings removed and cut into chunks
  • 1 medium onion, finely diced
  • 1 medium carrot, diced
  • 2 celery sticks, diced
  • 2 large garlic cloves, minced
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red chilli flakes
  • 75 ml (1/3 cup) dry white grape juice
  • 1 litre (4 cups) chicken stock
  • 150 ml (3/4 cup) double cream
  • 500 g gnocchi
  • A handful baby spinach
  • 30 g (1/4 cup) grated Parmesan cheese

Instructions

  1. In a heavy-bottomed pot, heat olive oil over medium-high heat. Add the chicken sausage and cook until browned, breaking it apart as it cooks.
  2. Add diced onion, carrot, and celery; sauté for 2–3 minutes until softened. Stir in minced garlic, Italian seasoning, and red chili flakes; cook for an additional minute.
  3. Pour in dry white grape juice; cook until most of the liquid evaporates (about 1 minute). Then add chicken stock; bring to a boil, reduce heat, and simmer for 10 minutes.
  4. Stir in double cream and gnocchi; cook according to package instructions (typically 2–3 minutes).
  5. Mix in baby spinach until wilted; add grated Parmesan cheese, season with salt and pepper to taste.
