  • pounds Brussels sprouts, trimmed and halved
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons balsamic vinegar
  • 1½ tablespoons honey
  • 1 teaspoon Dijon mustard (optional)
  • 1 small garlic clove, finely minced (optional)
  • Red pepper flakes (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Trim and halve the Brussels sprouts, then pat them dry to ensure crispiness.
  3. In a large bowl, toss the halved Brussels sprouts with olive oil, salt, and pepper until evenly coated.
  4. Spread them cut-side down on a parchment-lined baking sheet, ensuring they are not overcrowded.
  5. Roast in the oven for 20–25 minutes, flipping halfway through until golden brown and crispy.
  6. While roasting, combine balsamic vinegar and honey in a small saucepan over medium heat; simmer for 2–3 minutes until thickened.
  7. Toss the hot Brussels sprouts with the warm glaze immediately after roasting.
