Ingredients

  • 2 tablespoons olive oil
  • 1 large yellow onion, finely chopped
  • 2 medium carrots, peeled and diced
  • 2 stalks celery, diced
  • 2 cloves garlic, minced
  • 6 cups turkey or chicken broth
  • 2 cups cooked leftover turkey, shredded or diced
  • 2 medium Russet potatoes, peeled and diced
  • 1 cup frozen peas
  • 2 cups fresh spinach or kale

Instructions

  1. Prep your ingredients by chopping the onion, carrots, celery, garlic, and potatoes. Shred the turkey into bite-sized pieces.
  2. In a large pot over medium heat, add olive oil. Sauté the onion, carrots, and celery for about 8–10 minutes until softened. Stir in garlic and cook for an additional minute.
  3. Pour in the broth and add potatoes along with a bay leaf. Bring to a boil then reduce heat and simmer for about 15–20 minutes until potatoes are tender.
  4. Add the cooked turkey and season with salt and pepper. Simmer uncovered for another 5–10 minutes.
  5. Stir in frozen peas and greens; heat through before serving.
