- 2 tablespoons olive oil
- 1 large yellow onion, finely chopped
- 2 medium carrots, peeled and diced
- 2 stalks celery, diced
- 2 cloves garlic, minced
- 6 cups turkey or chicken broth
- 2 cups cooked leftover turkey, shredded or diced
- 2 medium Russet potatoes, peeled and diced
- 1 cup frozen peas
- 2 cups fresh spinach or kale
Instructions
- Prep your ingredients by chopping the onion, carrots, celery, garlic, and potatoes. Shred the turkey into bite-sized pieces.
- In a large pot over medium heat, add olive oil. Sauté the onion, carrots, and celery for about 8–10 minutes until softened. Stir in garlic and cook for an additional minute.
- Pour in the broth and add potatoes along with a bay leaf. Bring to a boil then reduce heat and simmer for about 15–20 minutes until potatoes are tender.
- Add the cooked turkey and season with salt and pepper. Simmer uncovered for another 5–10 minutes.
- Stir in frozen peas and greens; heat through before serving.
