  • 8 medium waxy potatoes (about 1 kg), peeled and diced
  • 2 shallots, peeled and halved
  • 5 heads garlic, cut the tops off
  • Olive oil for drizzling
  • Salt and pepper to taste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 3 cups (750ml) chicken or vegetable broth
  • 1 cup (250ml) heavy cream
  • Crispy turkey strips, crumbled
  • Grated/shredded mild cheddar cheese
  • Chopped parsley / dill / chives
  • Fresh baguette

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. On a parchment-lined baking sheet, combine diced potatoes, halved shallots, and garlic heads. Drizzle with olive oil and season with salt, pepper, thyme, and rosemary.
  3. Roast for about 30 minutes until lightly browned; cover with foil and return to roast an additional 15-25 minutes until tender.
  4. In a large pot, blend roasted vegetables with the broth and cream until smooth.
  5. Warm on medium heat before serving; adjust seasoning as needed.
