- 3 tbsp olive oil
- 8 chicken sausage links (cut into rings about 1/8 inch thick)
- 1/2 yellow onion (diced)
- 3 garlic cloves (minced)
- 1 15 oz can of tomato sauce
- 2 14.5 oz cans of fire-roasted tomatoes
- 1 48 oz chicken broth + 1 8 oz chicken broth
- 1 15 oz white cannellini beans (drained & rinsed)
- Tortellini (your choice)
- 1 cup spinach
- 1 1/2 tsp basil
- 2 tsp salt
- 1 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 tsp Chile Con Carne seasoning (or substitute with paprika if needed)
- 1 tbsp arrowroot powder + 2 tbsp warm water
- 1/2 cup half & half
Instructions
- In a large soup pot over medium heat, add olive oil. Sauté diced onion and minced garlic until golden brown, about 3-4 minutes.
- Stir in sliced chicken sausage and cook for another 2-3 minutes with cumin and basil.
- Add tomato sauce, fire-roasted tomatoes, chicken broth, and remaining spices; bring to a boil then reduce heat to simmer for at least one hour.
- Add tortellini; return to boil, then reduce heat for about 5 minutes until cooked. Stir in half & half, spinach, and drained beans.
- To thicken, mix arrowroot powder with warm water; stir into the soup until desired thickness is reached.
