  • 1/2 large yellow onion, chopped
  • 1 green bell pepper, chopped
  • 5 cups cubed sweet potatoes
  • 3 garlic cloves, minced
  • 1 pound turkey sausage
  • 10 eggs
  • 1/2 cup plant-based milk (or regular milk)
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup grated mozzarella cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a cast iron skillet or oven-safe baking dish, heat avocado oil over medium heat. Sauté chopped onion and bell pepper until softened. Add cubed sweet potatoes and minced garlic; cook until fragrant.
  3. Cook turkey sausage in the same skillet or a separate pan until browned, breaking it up as it cooks.
  4. In a mixing bowl, whisk together eggs and milk; season with thyme, salt, and pepper.
  5. Combine cooked turkey sausage with sautéed vegetables. Pour the egg mixture over all ingredients.
  6. Top with grated mozzarella cheese and bake for about 40 minutes or until set in the middle.
