- 1/2 large yellow onion, chopped
- 1 green bell pepper, chopped
- 5 cups cubed sweet potatoes
- 3 garlic cloves, minced
- 1 pound turkey sausage
- 10 eggs
- 1/2 cup plant-based milk (or regular milk)
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 cup grated mozzarella cheese
Instructions
- Preheat your oven to 375°F (190°C).
- In a cast iron skillet or oven-safe baking dish, heat avocado oil over medium heat. Sauté chopped onion and bell pepper until softened. Add cubed sweet potatoes and minced garlic; cook until fragrant.
- Cook turkey sausage in the same skillet or a separate pan until browned, breaking it up as it cooks.
- In a mixing bowl, whisk together eggs and milk; season with thyme, salt, and pepper.
- Combine cooked turkey sausage with sautéed vegetables. Pour the egg mixture over all ingredients.
- Top with grated mozzarella cheese and bake for about 40 minutes or until set in the middle.
