- 10 to 12 ounces of turkey sausage (casing removed)
- Olive oil
- 2 cloves garlic (minced)
- 3 cups fresh spinach
- 2 large bell peppers (diced)
- ½ medium yellow onion (diced)
- 12 large eggs
- ½ cup milk
- ½ cup shredded cheese
Instructions
- Preheat your oven to 375ºF (191ºC) and spray a casserole dish with non-stick spray.
- In a large skillet over medium heat, brown the turkey sausage until cooked through. Transfer to the prepared dish.
- Sauté garlic, spinach, bell peppers, and onion in the same skillet until tender. Season with salt and pepper.
- Combine the vegetable mixture with the sausage in the casserole dish.
- In a bowl, whisk together eggs, milk, and cheese. Pour over the sausage and vegetables in the dish.
- Bake for approximately 45 minutes or until golden brown around the edges.
