  • 10 to 12 ounces of turkey sausage (casing removed)
  • Olive oil
  • 2 cloves garlic (minced)
  • 3 cups fresh spinach
  • 2 large bell peppers (diced)
  • ½ medium yellow onion (diced)
  • 12 large eggs
  • ½ cup milk
  • ½ cup shredded cheese

Instructions

  1. Preheat your oven to 375ºF (191ºC) and spray a casserole dish with non-stick spray.
  2. In a large skillet over medium heat, brown the turkey sausage until cooked through. Transfer to the prepared dish.
  3. Sauté garlic, spinach, bell peppers, and onion in the same skillet until tender. Season with salt and pepper.
