Ingredients

Scale
  • 64 ounces chicken stock
  • small bunch fresh sage
  • 1 large head of garlic
  • 2/3 cup olive oil (or preferred vegetable oil)
  • 1 large egg (separated)
  • 1 tsp Dijon mustard
  • Pinch of salt

Instructions

  1. Heat chicken stock and sage in a large pot. Simmer gently.
  2. Peel and halve garlic cloves; remove embryonic shoots.
  3. Boil garlic in a small saucepan for 3–4 minutes; drain.
  4. Mash garlic until finely pureed; add to simmering stock for another 10 minutes.
  5. Prepare mayonnaise by blending egg yolk, mustard, salt, and olive oil until emulsified, adding reserved egg white if needed.
  6. Optionally strain the soup for a smoother texture and return to pot.
  7. Temper mayonnaise with hot soup before stirring into the pot.
  8. Gently reheat soup without boiling; serve hot.
