- 64 ounces chicken stock
- small bunch fresh sage
- 1 large head of garlic
- 2/3 cup olive oil (or preferred vegetable oil)
- 1 large egg (separated)
- 1 tsp Dijon mustard
- Pinch of salt
Instructions
- Heat chicken stock and sage in a large pot. Simmer gently.
- Peel and halve garlic cloves; remove embryonic shoots.
- Boil garlic in a small saucepan for 3–4 minutes; drain.
- Mash garlic until finely pureed; add to simmering stock for another 10 minutes.
- Prepare mayonnaise by blending egg yolk, mustard, salt, and olive oil until emulsified, adding reserved egg white if needed.
- Optionally strain the soup for a smoother texture and return to pot.
- Temper mayonnaise with hot soup before stirring into the pot.
- Gently reheat soup without boiling; serve hot.
