  • 4 bone-in beef chops (up to 1/2-inch thick)
  • Salt and freshly ground black pepper (to taste)
  • 1 teaspoon sweet or smoked paprika
  • 2 tablespoons butter
  • 1½ tablespoons vegetable oil (divided)
  • 2 small zucchini (sliced into half moons)
  • 4 tablespoons butter (room temperature)
  • ½ tablespoon garlic powder
  • ½ tablespoon dried basil
  • 2 teaspoons dried parsley
  • 1 teaspoon dried oregano

Instructions

  1. Season beef chops with salt, pepper, and paprika. Cut slits in the fat around the chops.
  2. Heat butter and 1 tablespoon vegetable oil in a large skillet over medium-high heat. Add beef chops and cook for about 5 minutes per side or until they reach an internal temperature of 145°F.
  3. Remove beef from skillet and keep warm.
  4. In the same skillet, add remaining oil and zucchini slices. Cook for 2 to 3 minutes until tender.
  5. For garlic butter, mix room temperature butter, garlic powder, basil, parsley, and oregano with a fork until well combined.
  6. Serve beef chops topped with garlic butter alongside zucchini.
