  • 2 lb potatoes, peeled and cooked
  • 5 cloves garlic, minced
  • 1 cup onions, chopped
  • 2 cups Brussels sprouts, cleaned and halved
  • 3 tsp garlic powder (optional)
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Boil or steam the potatoes for about 15-20 minutes until tender but firm. Let cool slightly and cut into inch-sized chunks.
  2. In a large skillet, heat half of the olive oil over medium heat. Add chopped onions and halved Brussels sprouts along with minced garlic. Roast for approximately 10 minutes until browned.
  3. Stir in optional garlic powder, then add potato chunks and remaining olive oil. Cook together for another 10 minutes until everything is heated through.
  4. Alternatively, roast on a baking sheet at 425°F for about 25 minutes total.
