- 4 boneless skinless salmon fillets
- 1/4 cup plain flour
- 1 tsp garlic powder
- 1 tsp salt (plus more to taste)
- 1/2 tsp black pepper (plus more to taste)
- 1/2 tbsp olive oil
- 6 tbsp unsalted butter (divided into tbsp chunks)
- 2 cloves of garlic (finely diced)
- 1/2 cup vegetable stock
- 1 tbsp finely diced fresh parsley
- 1 lemon (divided into 4 wedges to serve)
Instructions
- In a shallow dish, mix flour, garlic powder, salt, and black pepper. Coat each salmon fillet evenly.
- Heat olive oil in a non-stick frying pan over medium-high heat. Sear the salmon for about 3 minutes on one side until golden brown; flip and cook for an additional 2 minutes.
- Remove the salmon from the pan and add diced garlic. Sauté until fragrant, then pour in vegetable stock while scraping up browned bits.
- Stir in remaining butter until melted and combined, then add parsley.
- Return salmon to the pan to warm through, basting with sauce if desired. Serve with lemon wedges.
