  • 4 boneless skinless salmon fillets
  • 1/4 cup plain flour
  • 1 tsp garlic powder
  • 1 tsp salt (plus more to taste)
  • 1/2 tsp black pepper (plus more to taste)
  • 1/2 tbsp olive oil
  • 6 tbsp unsalted butter (divided into tbsp chunks)
  • 2 cloves of garlic (finely diced)
  • 1/2 cup vegetable stock
  • 1 tbsp finely diced fresh parsley
  • 1 lemon (divided into 4 wedges to serve)

Instructions

  1. In a shallow dish, mix flour, garlic powder, salt, and black pepper. Coat each salmon fillet evenly.
  2. Heat olive oil in a non-stick frying pan over medium-high heat. Sear the salmon for about 3 minutes on one side until golden brown; flip and cook for an additional 2 minutes.
  3. Remove the salmon from the pan and add diced garlic. Sauté until fragrant, then pour in vegetable stock while scraping up browned bits.
  4. Stir in remaining butter until melted and combined, then add parsley.
  5. Return salmon to the pan to warm through, basting with sauce if desired. Serve with lemon wedges.
