- 2 cups chicken broth
- 1 cup heavy cream
- 4 cloves garlic, minced
- 2 cups fresh spinach
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 1/2 teaspoon Italian seasoning
- 1/4 teaspoon red pepper flakes (optional)
- 1/2 cup sun-dried tomatoes, chopped
- Fresh parsley, chopped
- Additional Parmesan cheese
Instructions
- In a mixing bowl, season the diced chicken with garlic powder, salt, and pepper. Heat olive oil in a skillet over medium heat, then cook the seasoned chicken until browned (5-7 minutes). Remove from skillet.
- In the same skillet, sauté minced garlic for about 30 seconds. Pour in chicken broth and bring to a simmer. Stir in heavy cream and Italian seasoning; allow the sauce to thicken (3-5 minutes).
- Add potato gnocchi to the simmering sauce; cook until they float (about 2-3 minutes).
- Return cooked chicken to the skillet along with fresh spinach and sun-dried tomatoes; stir gently until spinach wilts.
- Serve immediately garnished with chopped parsley and additional Parmesan cheese if desired.
