  • 2 tablespoons unsalted butter (divided)
  • ½ cup sliced or slivered almonds
  • 1 tablespoon extra virgin olive oil (divided)
  • 1 pound green beans (rinsed and trimmed)
  • ⅓ cup water
  • 1 tablespoon lemon juice (fresh)
  • ½ teaspoon sea salt
  • 1 to 2 teaspoons minced garlic (about 3 cloves)

Instructions

  1. In a large skillet over medium heat, melt one tablespoon of butter. Add sliced almonds and toast until golden brown and fragrant, about 4-5 minutes. Remove from the skillet and set aside.
  2. Wipe the skillet clean. Add one tablespoon of olive oil along with rinsed green beans, water, salt, and lemon juice.
  3. Cover with a lid and cook for 7-9 minutes until bright green and tender. Remove the lid and cook until most water evaporates.
  4. Stir in remaining butter and minced garlic; sauté for another minute until fragrant. Fold in toasted almonds, adjust seasoning if necessary, and serve hot.
