- 1 cup diced onion
- ½ cup diced red bell pepper
- ½ cup diced green bell pepper
- 2 pounds russet potatoes
- 1 can evaporated milk
- 1 can cream of mushroom soup
- 1 can cream of chicken soup
- 3 cups shredded cheddar cheese (divided)
- 1 cup fried onions
Instructions
- Preheat the oven to 350°F and spray a baking dish with cooking spray.
- In a large skillet over medium-high heat, cook the ground beef until browned; season with salt and pepper.
- Add diced onions and bell peppers to the skillet; sauté until onion is translucent.
- Peel and slice the potatoes thinly; place in cold water to prevent browning.
- In a bowl, combine evaporated milk, cream of mushroom soup, and cream of chicken soup.
- Layer half of the potato slices in the baking dish, followed by half of the meat mixture, half of the sauce, and 1½ cups cheese. Repeat layers.
