  • 2 pounds ground beef
  • 1 cup diced onion
  • ½ cup diced red bell pepper
  • ½ cup diced green bell pepper
  • 2 pounds russet potatoes
  • 1 can evaporated milk
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 3 cups shredded cheddar cheese (divided)
  • 1 cup fried onions

Instructions

  1. Preheat the oven to 350°F and spray a baking dish with cooking spray.
  2. In a large skillet over medium-high heat, cook the ground beef until browned; season with salt and pepper.
  3. Add diced onions and bell peppers to the skillet; sauté until onion is translucent.
  4. Peel and slice the potatoes thinly; place in cold water to prevent browning.
  5. In a bowl, combine evaporated milk, cream of mushroom soup, and cream of chicken soup.
  6. Layer half of the potato slices in the baking dish, followed by half of the meat mixture, half of the sauce, and 1½ cups cheese. Repeat layers.
  7. Top with fried onions, cover with foil, and bake for approximately 75-80 minutes.
  8. Uncover and broil for an additional 1-2 minutes until golden brown.
  9. Let sit for 10 minutes before serving.
