Ingredients

Scale
  • 6 tablespoons salted butter
  • 1/2 cup light brown sugar (packed)
  • 1/2 cup granulated sugar
  • 1/2 cup sweetened condensed milk
  • 1/2 cup light corn syrup
  • 1/2 teaspoon vanilla extract
  • 2 cups pecan halves
  • 16 oz almond bark or high-quality chocolate

Instructions

  1. Preheat oven to 350°F.
  2. Toast pecans on a baking sheet for 5-10 minutes until fragrant, then chop and set aside.
  3. Line a baking sheet with parchment paper.
  4. In a microwave-safe bowl, melt butter and mix in brown sugar, granulated sugar, sweetened condensed milk, and corn syrup. Microwave on HIGH for 6-8 minutes until it reaches 235°F.
  5. Test caramel in ice water; if it forms a soft ball, it's ready. Stir in vanilla and chopped pecans.
  6. Drop spoonfuls onto the lined baking sheet to form clusters and refrigerate until set (about 20 minutes).
  7. Melt chocolate in the microwave or double boiler; dip each cluster and return to parchment paper.
