Ingredients

  • 300 g digestive biscuits
  • 150 g unsalted butter
  • 750 g full-fat cream cheese
  • 75100 g hot chocolate mix
  • 300 ml double cream
  • 150 ml double cream (for topping)
  • 2 tbsp icing sugar
  • 1 Flake, crushed
  • Micro-mini vegan marshmallows

Instructions

  1. For the base, crush the digestive biscuits in a food processor, then mix with melted butter. Press firmly into the bottom of a springform pan.
  2. In a mixing bowl, beat cream cheese until smooth; gradually add hot chocolate mix until fully incorporated.
  3. In another bowl, whip 300 ml double cream until soft peaks form and gently fold into the cream cheese mixture.
  4. Pour the filling over the biscuit base and smooth out the top. Refrigerate for at least 6 hours or overnight.
  5. Before serving, whip additional double cream with icing sugar and top your cheesecake. Decorate with crushed chocolate and mini vegan marshmallows.
