- 300 g digestive biscuits
- 150 g unsalted butter
- 750 g full-fat cream cheese
- 75–100 g hot chocolate mix
- 300 ml double cream
- 150 ml double cream (for topping)
- 2 tbsp icing sugar
- 1 Flake, crushed
- Micro-mini vegan marshmallows
Instructions
- For the base, crush the digestive biscuits in a food processor, then mix with melted butter. Press firmly into the bottom of a springform pan.
- In a mixing bowl, beat cream cheese until smooth; gradually add hot chocolate mix until fully incorporated.
- In another bowl, whip 300 ml double cream until soft peaks form and gently fold into the cream cheese mixture.
- Pour the filling over the biscuit base and smooth out the top. Refrigerate for at least 6 hours or overnight.
- Before serving, whip additional double cream with icing sugar and top your cheesecake. Decorate with crushed chocolate and mini vegan marshmallows.
