- 3/4 cup unsalted butter (softened)
- 3/4 cup light brown sugar
- 1/4 cup pure maple syrup
- 1 large egg
- 1 teaspoon baking soda
- 1 1/2 teaspoons cinnamon (divided)
- 1/2 teaspoon salt
- 1 teaspoon maple extract
- 1/2 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a medium bowl, combine flour, baking soda, 1 teaspoon cinnamon, and salt; set aside.
- In another bowl, mix butter, brown sugar, and half of the granulated sugar until fluffy. Add maple syrup, egg, maple extract, and vanilla; mix well.
- Gradually blend in dry ingredients until just combined.
- Roll dough into balls and coat in a mixture of remaining sugar and cinnamon.
- Place on prepared baking sheets with space in between.
- Bake for 12-14 minutes until lightly golden; cool on sheets for a few minutes before transferring to racks.
