  • 2 1/2 cups all-purpose flour
  • 3/4 cup unsalted butter (softened)
  • 3/4 cup light brown sugar
  • 1/4 cup pure maple syrup
  • 1 large egg
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons cinnamon (divided)
  • 1/2 teaspoon salt
  • 1 teaspoon maple extract
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, combine flour, baking soda, 1 teaspoon cinnamon, and salt; set aside.
  3. In another bowl, mix butter, brown sugar, and half of the granulated sugar until fluffy. Add maple syrup, egg, maple extract, and vanilla; mix well.
  4. Gradually blend in dry ingredients until just combined.
  5. Roll dough into balls and coat in a mixture of remaining sugar and cinnamon.
  6. Place on prepared baking sheets with space in between.
  7. Bake for 12-14 minutes until lightly golden; cool on sheets for a few minutes before transferring to racks.
