- 12 oz elbow macaroni
- 5 oz garlic and herb cheese
- 2 1/2 cups shredded sharp cheddar cheese
- 2 tbsp cold unsalted butter
- 2 large eggs
- 3/4 cup milk
- 1/4 cup sour cream
- Pinch salt and pepper
- 2 cups crushed Ritz Crackers
- 6 tbsp butter (melted)
Instructions
- Preheat the oven to 375°F (190°C) and spray two mini muffin tins with cooking spray.
- In a bowl, melt the butter for the crust. Mix in crushed Ritz crackers and shredded cheddar cheese, then press into muffin tins.
- Boil water, cook macaroni until just shy of al dente, drain, and transfer to a mixing bowl.
- Add garlic herb cheese, cheddar, sour cream, milk, eggs, cold butter, salt, and pepper to the macaroni; mix until smooth.
- Spoon mixture into each muffin well over the crust.
- Bake for 12-14 minutes until golden brown; let cool for at least 10 minutes before removing from tins.
