Description

Ingredients

  • 12 oz elbow macaroni
  • 5 oz garlic and herb cheese
  • 2 1/2 cups shredded sharp cheddar cheese
  • 2 tbsp cold unsalted butter
  • 2 large eggs
  • 3/4 cup milk
  • 1/4 cup sour cream
  • Pinch salt and pepper
  • 2 cups crushed Ritz Crackers
  • 6 tbsp butter (melted)

Instructions

  1. Preheat the oven to 375°F (190°C) and spray two mini muffin tins with cooking spray.
  2. In a bowl, melt the butter for the crust. Mix in crushed Ritz crackers and shredded cheddar cheese, then press into muffin tins.
  3. Boil water, cook macaroni until just shy of al dente, drain, and transfer to a mixing bowl.
  4. Add garlic herb cheese, cheddar, sour cream, milk, eggs, cold butter, salt, and pepper to the macaroni; mix until smooth.
  5. Spoon mixture into each muffin well over the crust.
  6. Bake for 12-14 minutes until golden brown; let cool for at least 10 minutes before removing from tins.
