  • 1 package store-bought refrigerated pie crust
  • 1 & 1/4 cups chopped pecans
  • 2/3 cup light corn syrup
  • 1/3 cup light brown sugar
  • 2 large eggs, lightly beaten
  • 3 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon (optional)
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F and spray the muffin tin with nonstick spray.
  2. Roll out the pie crust into a 12-inch circle and cut out 12 circles using a 3-inch cookie cutter. Repeat with the second crust to make a total of 24.
  3. Press each crust into the muffin tin cavities carefully.
  4. In a bowl, whisk together the brown sugar, melted butter, corn syrup, chopped pecans, cinnamon (if using), and salt. Then add the beaten eggs and mix well.
  5. Spoon the filling into each crust until about two-thirds full.
  6. Bake for about 20 minutes or until the filling is set and tops are golden brown.
  7. Allow to cool before serving.
