- 1 & 1/4 cups chopped pecans
- 2/3 cup light corn syrup
- 1/3 cup light brown sugar
- 2 large eggs, lightly beaten
- 3 tablespoons melted butter
- 1 teaspoon vanilla extract
- 1/4 teaspoon cinnamon (optional)
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F and spray the muffin tin with nonstick spray.
- Roll out the pie crust into a 12-inch circle and cut out 12 circles using a 3-inch cookie cutter. Repeat with the second crust to make a total of 24.
- Press each crust into the muffin tin cavities carefully.
- In a bowl, whisk together the brown sugar, melted butter, corn syrup, chopped pecans, cinnamon (if using), and salt. Then add the beaten eggs and mix well.
