  • 9 lasagna noodles
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 pound mushrooms (cremini or button), sliced
  • ½ teaspoon dried thyme
  • Salt and pepper, to taste
  • 2 cups fresh spinach leaves, chopped
  • 3 cups marinara sauce
  • 2 cups ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Fresh basil leaves, for garnish

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Cook lasagna noodles in salted boiling water until al dente. Drain and set aside.
  3. In a skillet, heat olive oil over medium heat. Sauté onion until translucent, then add garlic and cook for another minute.
  4. Stir in sliced mushrooms, thyme, salt, and pepper; cook until tender. Add chopped spinach until wilted.
  5. Layer the baking dish: spread marinara sauce on the bottom; place three noodles on top; add half of the ricotta mixture, followed by half of the mushroom filling and one-third each of mozzarella and Parmesan cheeses. Repeat layers once more, finishing with marinara sauce topped with remaining mozzarella and Parmesan.
  6. Cover with foil and bake for 25 minutes; uncover and bake for an additional 10–15 minutes until bubbly.
  7. Remove from oven and let cool slightly before serving. Garnish with fresh basil leaves for an added touch of flavor.
