Ingredients

  • 4 oz cream cheese (softened)
  • 2 Tbsp powdered sugar
  • 1/3 cup pumpkin puree
  • 2 cups graham cracker crumbs
  • 1/2 tsp pumpkin pie spice
  • 1/2 tsp cinnamon
  • 2 cups white chocolate chips (for coating)
  • 12 tsp coconut oil (optional)

Instructions

  1. In a mixing bowl, beat together cream cheese and powdered sugar until creamy.
  2. Mix in pumpkin puree, 1 cup graham cracker crumbs, pumpkin pie spice, and cinnamon until fully blended.
  3. Add the remaining graham cracker crumbs and mix until combined.
  4. Chill the dough covered for at least 30 minutes.
  5. Prepare a baking sheet lined with parchment paper.
  6. Scoop tablespoon-sized portions and roll into balls; place on the baking sheet and chill again for another 30 minutes.
  7. Melt white chocolate chips in a microwave-safe bowl until smooth.
  8. Dip each chilled ball into melted chocolate and set back on the baking sheet to cool.
  9. Drizzle with any extra chocolate and add sprinkles or graham cracker crumbs if desired.
  10. Allow to set in the fridge for another 20–30 minutes before serving.
