- 4 oz cream cheese (softened)
- 2 Tbsp powdered sugar
- 1/3 cup pumpkin puree
- 2 cups graham cracker crumbs
- 1/2 tsp pumpkin pie spice
- 1/2 tsp cinnamon
- 2 cups white chocolate chips (for coating)
- 1–2 tsp coconut oil (optional)
Instructions
- In a mixing bowl, beat together cream cheese and powdered sugar until creamy.
- Mix in pumpkin puree, 1 cup graham cracker crumbs, pumpkin pie spice, and cinnamon until fully blended.
- Add the remaining graham cracker crumbs and mix until combined.
- Chill the dough covered for at least 30 minutes.
- Prepare a baking sheet lined with parchment paper.
- Scoop tablespoon-sized portions and roll into balls; place on the baking sheet and chill again for another 30 minutes.
- Melt white chocolate chips in a microwave-safe bowl until smooth.
- Dip each chilled ball into melted chocolate and set back on the baking sheet to cool.
- Drizzle with any extra chocolate and add sprinkles or graham cracker crumbs if desired.
- Allow to set in the fridge for another 20–30 minutes before serving.
