- 1 small yellow onion, diced
- kosher salt (to taste)
- black pepper (to taste)
- 4 cups russet potatoes, peeled & thinly sliced (1/8-inch)
- 2 cups cheddar, shredded (sharp preferred)
- 10.5 oz can cream of mushroom soup (or celery)
- 1 cup whole milk
- 1/2 tsp garlic powder
- 1/2 tsp dried thyme
- 1/4 tsp smoked paprika (optional)
Instructions
- Preheat your oven to 375°F / 190°C and grease a 9×13-inch baking dish.
- In a large skillet over medium-high heat, brown the ground beef with diced onions until cooked through. Season with kosher salt and black pepper.
- In a mixing bowl, whisk together cream of mushroom soup, whole milk, garlic powder, thyme, and optional smoked paprika until smooth.
- Peel and slice russet potatoes into 1/8-inch thick rounds, seasoning with kosher salt and black pepper.
- Layer 1/3 of the sauce in the baking dish, followed by half of the seasoned potato slices and half of the beef mixture. Repeat layers, finishing with sauce on top.
- Cover with aluminum foil and bake for 45–50 minutes until potatoes are just tender. Remove foil, sprinkle cheese on top, and bake uncovered for an additional 15–20 minutes until bubbly and golden brown.
