  • 1 pound beef tenderloin (cut into 12 medallions)
  • Salt and freshly ground black pepper (to taste)
  • 1 teaspoon dried thyme
  • ½ teaspoon sweet paprika
  • ¼ teaspoon garlic powder
  • 1 tablespoon butter (divided)
  • ½ cup low sodium chicken broth
  • Chopped fresh parsley (for garnish)

Instructions

  2. Season the beef medallions with salt, pepper, thyme, paprika, and garlic powder.
  3. Sear half of the medallions for about 3 minutes without overcrowding.
  4. Flip the medallions, add half a tablespoon of butter, and cook until they reach an internal temperature of 145°F (about 3-4 minutes). Remove from skillet.
  5. Repeat with the remaining medallions.
  6. In the same skillet, add chicken broth and whisk to deglaze the pan.
  7. Stir in pats of butter until melted to create the sauce.
  8. Return all medallions to the skillet briefly to heat through while spooning sauce over them.
  9. Garnish with fresh parsley before serving.
