  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 can (15 oz) diced tomatoes
  • 1 cup corn kernels
  • 1 cup black beans, drained and rinsed
  • 1/2 cup heavy cream

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Roast the poblano peppers on a baking sheet for 15-20 minutes until charred. Cool, peel, deseed, and chop.
  3. In a large pot over medium heat, add olive oil and sauté the diced onion for about 5 minutes. Add minced garlic and sauté for an additional minute.
  4. Season the chicken breasts with salt, pepper, cumin, chili powder, and smoked paprika in the pot. Sear both sides for about 3-4 minutes.
