  • 1 cup white sugar (for caramel)
  • 1/3 cup unsalted butter (cut into 5 pieces)
  • 1/2 cup whipping cream (for caramel)
  • 1 teaspoon vanilla extract (for caramel)
  • 1/4 teaspoon coarse salt (for caramel)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, whisk together flour, pumpkin pie spice, baking powder, baking soda, and salt.
  3. In another bowl, beat together vegetable oil, brown sugar, white sugar, eggs, and vanilla until smooth; stir in the pumpkin puree.
  4. Gradually mix the dry ingredients into the wet mixture until just combined.
  5. Pour the batter into the prepared pan and bake for 30–35 minutes or until a toothpick comes out clean.
