- 2 cups (240 g) all purpose flour
- 1 cup (80 g) quick cooking or old fashioned oats
- 2 teaspoons ground cinnamon
- 2 teaspoons pumpkin spice
- 1 teaspoon baking soda
- ½ teaspoon salt
- ¾ cup (170 g) unsalted butter, cold and sliced
- ¾ cup (150 g) light brown sugar
- ½ cup (100 g) granulated sugar
- 1 large egg yolk
- 2 tablespoons (30 ml) molasses
- 2 teaspoons (10 ml) vanilla extract
- 1½ cup (180 g) powdered sugar
- ½ teaspoon ground cinnamon or pumpkin spice
- 2 – 3 tablespoons (30 – 45 ml) milk, as needed
Instructions
- Prepare pumpkin puree by draining excess moisture.
- In a bowl, whisk together flour, oats, baking soda, cinnamon, pumpkin spice, and salt.
- Cream cold butter with brown and granulated sugars until smooth.
- Mix in the pumpkin puree, egg yolk, and vanilla until well combined.
- Gradually add dry ingredients until just mixed; chill dough for at least 30 minutes.
- Preheat oven to 350°F (177°C) and line a baking sheet with parchment paper.
- Scoop cookie dough onto the sheet, spacing them apart.
- Bake for 10-12 minutes until edges are lightly golden; cool before glazing.
