  • 2 cups (240 g) all purpose flour
  • 1 cup (80 g) quick cooking or old fashioned oats
  • 2 teaspoons ground cinnamon
  • 2 teaspoons pumpkin spice
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup (170 g) unsalted butter, cold and sliced
  • ¾ cup (150 g) light brown sugar
  • ½ cup (100 g) granulated sugar
  • 1 large egg yolk
  • 2 tablespoons (30 ml) molasses
  • 2 teaspoons (10 ml) vanilla extract
  • 1½ cup (180 g) powdered sugar
  • ½ teaspoon ground cinnamon or pumpkin spice
  • 23 tablespoons (3045 ml) milk, as needed

Instructions

  1. Prepare pumpkin puree by draining excess moisture.
  2. In a bowl, whisk together flour, oats, baking soda, cinnamon, pumpkin spice, and salt.
  3. Cream cold butter with brown and granulated sugars until smooth.
  4. Mix in the pumpkin puree, egg yolk, and vanilla until well combined.
  5. Gradually add dry ingredients until just mixed; chill dough for at least 30 minutes.
  6. Preheat oven to 350°F (177°C) and line a baking sheet with parchment paper.
  7. Scoop cookie dough onto the sheet, spacing them apart.
  8. Bake for 10-12 minutes until edges are lightly golden; cool before glazing.
