  • 1 cup + 3 tablespoons all purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup granulated sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cloves
  • 1/2 cup pumpkin puree
  • 1/4 cup milk
  • 1/4 cup melted butter or vegetable oil
  • 1 1/2 teaspoons vanilla
  • 1/2 cup granulated sugar (for topping)
  • 1/2 cup brown sugar (for topping)
  • 1/4 cup chopped pecans (for topping)
  • 1 1/2 cups very hot water

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit.
  2. In a medium-sized bowl, stir together the flour, baking powder, salt, sugar, cinnamon, nutmeg, and cloves until well combined.
  3. In another bowl, combine the pumpkin puree, milk, melted butter (or vegetable oil), and vanilla extract; stir until smooth.
  4. Pour the wet ingredients into the dry ingredient bowl and mix until you create a thick batter. Transfer this batter into an 8-inch casserole dish with high sides.
  5. In a separate bowl, mix together granulated sugar, brown sugar, and chopped pecans. Evenly spread this mixture over the top of your batter in the casserole dish.
  6. Carefully pour very hot water over the entire cobbler mixture. Do not stir!
  7. Place your casserole dish on a baking sheet and bake in preheated oven for about 40 minutes or until the center is set.
  8. Let your Pumpkin Pecan Cobbler cool for about 5-10 minutes before serving.
