  • 6 large tortillas
  • 1/2 cup granulated sugar
  • 1 tsp ground cinnamon
  • 1/3 cup butter (melted)
  • 4 oz cream cheese (softened)
  • 1/4 cup powdered sugar
  • 3/4 cup canned pumpkin puree
  • 1/2 tsp pure vanilla extract
  • 1 1/2 tsp pumpkin pie spice
  • 1/2 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract
  • Pecans for garnish (chopped)

Instructions

  1. Preheat your oven to 400°F.
  2. Using a cookie cutter, cut out rounds from each tortilla.
  3. Mix granulated sugar and cinnamon on a plate. Stab each tortilla round with a fork to prevent air bubbles.
  4. Brush both sides of the tortillas with melted butter, then coat in the cinnamon-sugar mixture.
  5. Place the tortilla rounds between muffin cups upside down on a baking sheet and bake for 10 minutes until golden brown; let cool.
  6. Prepare whipped cream by beating heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.
  7. In another bowl, mix softened cream cheese with powdered sugar until smooth; add pumpkin puree and spices until combined.
  8. Fill cooled taco shells with pumpkin filling, top with whipped cream, and garnish as desired.
