  • 2 cups onion, sliced
  • Water as needed
  • 2 cups pumpkin or butternut squash, peeled and cut into bite-sized pieces
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 8 sheets phyllo dough, thawed as directed on package
  • ¼ cup olive oil
  • 4 eggs, lightly beaten
  • 1 cup half and half (or ½ milk and ½ heavy cream)
  • 2 ounces gorgonzola, crumbled
  • 1 tablespoon sage, thinly sliced

Instructions

  1. Heat olive oil in a frying pan over medium heat and sauté sliced onions until tender (10-15 minutes). Add water and cook until caramelized (about 50 minutes), stirring occasionally.
  2. Toss pumpkin pieces with olive oil, salt, and pepper; roast at 350°F (180°C) for 30-40 minutes until tender.
  3. Brush phyllo dough sheets with olive oil and layer them in a greased pie dish.
  4. In a bowl, mix caramelized onions, roasted pumpkin, beaten eggs, half-and-half (or cream), crumbled gorgonzola, and sage.
  5. Pour filling into the phyllo crust and bake at 375°F (190°C) for 25-45 minutes until golden brown.
