  • 2 cups all-purpose flour
  • 1/2 tsp salt
  • 3/4 cup sliced almonds
  • 1 cup unsalted butter (softened)
  • 1/2 cup powdered sugar (for dough)
  • 1/2 tsp almond extract
  • 6 Tbsp seedless raspberry jam
  • 1 1/2 cups powdered sugar (for coating)

Instructions

  1. Whisk together flour and salt in a bowl; set aside. Process sliced almonds in a food processor until finely ground; set aside.
  2. In a stand mixer, cream softened butter with 1/2 cup powdered sugar until smooth. Mix in almond extract.
  3. Gradually add the flour mixture while mixing gently; fold in ground almonds.
  4. Scoop dough into balls and create an indentation in each; fill with about 1/2 tsp raspberry jam.
  5. Seal with another ball of dough, ensuring edges are well sealed.
  6. Chill dough balls for about 90 minutes; preheat oven to 375°F during the last 15 minutes.
  7. Bake cookies for 11 – 13 minutes until set; let cool slightly before rolling in powdered sugar.
