Ingredients

Scale
  • 1/2 cup unsalted butter, softened
  • 3/4 cup light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon professional red food coloring
  • 2 cups all-purpose flour
  • 1/3 cup cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • For coating: 1/2 cup granulated sugar
  • For coating: 1/2 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until fluffy. Add eggs one by one, mixing well after each addition. Stir in vanilla extract and red food coloring until combined.
  3. In another bowl, sift together flour, cocoa powder, baking powder, and salt. Gradually incorporate dry ingredients into the wet mixture until just combined.
  4. Roll dough into balls using a cookie scoop; coat first in granulated sugar then in powdered sugar before placing on the baking sheet.
  5. Bake for about 10 minutes until puffed and cracked on top but gooey in the center. Cool on wire racks.
