  • 4 boneless, skinless chicken breasts
  • 1 cup crumbled feta cheese
  • 1 cup fresh spinach, chopped
  • ½ cup sun-dried tomatoes, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 2 cloves garlic, minced
  • ½ teaspoon red pepper flakes (optional)
  • 1 tablespoon olive oil for cooking

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place each chicken breast between two pieces of plastic wrap and pound to about ½ inch thick.
  3. Season the chicken with salt, pepper, garlic powder, oregano, and smoked paprika.
  4. In a bowl, mix feta cheese, spinach, sun-dried tomatoes, minced garlic, and olive oil until combined.
  5. Spoon the filling onto one side of each chicken breast and roll them up tightly.
  6. Place the rolled chicken seam-side down in a greased baking dish and bake for 30 minutes or until fully cooked (internal temperature should reach 165°F).
