  • 2 tbsp apple cider or 1 tsp lemon juice
  • 1/2 cup brown sugar, packed
  • 1 and 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ground cloves
  • 1 cup granulated sugar for caramel
  • 6 tbsp salted butter, cubed
  • 1/2 cup + 1 tbsp heavy cream
  • pinch of flaky sea salt
  • 1/2 cup granulated sugar for crumble
  • 2 and 3/4 tsp cinnamon for crumble
  • 1/4 tsp nutmeg for crumble
  • 1/8 tsp allspice for crumble
  • 1/8 tsp ground cloves for crumble
  • 1/4 cup salted butter, melted for crumble
  • 1/4 cup light brown sugar, packed for crumble
  • 1 and 1/2 tbsp granulated sugar for crumble
  • 1/2 cup + 1 tbsp all-purpose flour for crumble
  • 3/4 tsp cinnamon for crumble
  • pinch of salt for crumble

Instructions

  1. Make the cookie dough by creaming softened butter and sugars, then mix in eggs and dry ingredients. Chill for 30 minutes.
  2. Prepare the apple filling by cooking diced apples with butter, sugar, and spices until tender. Cool down.
  3. Create the salted caramel sauce by combining sugar and butter with cream; let cool to thicken.
  4. Scoop chilled dough into balls and chill again before baking at 365°F for 10-12 minutes.
  5. Assemble cookies by pressing an indent into each, filling with apple mixture, topping with crumble, and finishing with caramel drizzle.
